Quantification of Food Losses and Waste in Peru: A Mass Flow Analysis along the Food Supply Chain

The quantification of food losses and waste (FLW) has become a research hotspot in the last decade, but little work been done to have data Latin American countries. This paper contributes addressing this knowledge gap by examining magnitude FLW along whole supply chain (FSC) Peru. methodological approach was based on top-down mass flow analysis at all steps FSC for 2007–2017 period (most recently available data), including different commodity groups (CGs), such as cereals, roots tubers, oil seeds pulses, fruits, vegetables, meat, fish seafood, milk. Results show an annual average 12.8 million tonnes, which represents 47.76% national supply. Regarding per capita quantities, amount 426.56 kg year when considering entire FSC, 67.34 only consumption step. study suggests CGs are most promising targets reduction strategies
